Peppermint Bark

Here is the most simple, easy, delicious peppermint bark you could ever hope to make.

2 bags of semisweet chocolate chips
1 pack of candy canes or peppermint candies

Crush peppermint (this is the most difficult step). I tried using a rolling pin and a freezer bag, and it wasn't super successful. Then I tried the food processor, which worked a little better (although super loud–Penny was not a fan of this step!). You might also try smashing it with a hammer.
After crushing the peppermint, set some of it aside (maybe 1/2-3/4 cup). Melt the chocolate in a double boiler and mix in the remaining peppermint. Once melted and incorporated, spread the chocolate/peppermint mixture onto waxed paper. Then sprinkle your reserved peppermint pieces onto the still warm chocolate mixture. Press the top with another sheet of waxed paper to help the peppermint pieces on top stick. Let cool.

Once cooled, break into small pieces.

Makes a great gift for a hostess, neighbor, teacher, or coworker!
