Guacamole Recipe

Vitamix Guacamole is one of my favorite recipes. Guacamole is the perfect afternoon snack or easy side dish. I love to bring it to social gatherings because it takes about 20 seconds to make and is always a hit. It is also one of the foods that Penny never ever turns down, and being so rich in healthy fats and vitamin/nutrient-dense, it is a great thing to snack on often, both for her and Bugabug. Those growing brains need fats!

Here's how I make my guacamole. This is a very forgiving recipe and will tolerate more or less of each ingredient, so adjust to your tastes.

Ingredients:
about a 1" wedge of red onion (I go easy on it because raw onion can upset my stomach and can be overpowering)
1-2 Tbs fresh cilantro
1/2 small/medium tomato
splash of citrus (1-2 tsp)–I usually use bottled lemon juice b/c I always have that on hand, but if you have a fresh lemon or lime, use that
2 avocados
salt and pepper to taste

1. Turn the Vitamix blade on 1-2. Drop in red onion while the blade is already spinning. Once the onion is diced, drop in the cilantro and tomato. Continue to run on 1-2 for a few more seconds until everything is diced.
2. Turn the blade off. Add the citrus, the avocados (skin and pits removed), and the salt & pepper.
3. Turn the machine back to 1-2. I only turn it on for a few seconds because I like my guac on the chunky side, but if you like it smooth, leave it on a little longer or turn it up to 4-5.

Serve immediately with tortilla chips. The saltier the better IMO. I love the Kirkland organic corn tortilla chips from Costco. They are super salty and perfect for guac. You can save the guac in an airtight container in the fridge–the citrus helps to keep it from browning, but this recipe is so yummy that it's rare to have leftovers.

You can totally make this without the Vitamix too. You'll just have to spend some extra time chopping and dicing. It used to take me about 20 minutes to make this, and now it takes maybe 1 minute. Which means that I make guacamole much more often!
